  • 1 cup milk (or your favorite dairy-free alternative) Any type of milk preferred
  • 1/2 cup grated carrots Make sure they are finely grated for smooth texture
  • 1/4 cup Greek yogurt Can substitute with dairy-free yogurt for vegan option
  • 1 tablespoon maple syrup Can substitute with agave syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup raisins Adds sweetness and chewy texture
  • Chopped nuts for topping (try walnuts or pecans) Topping variation

Preparation
  1. In a medium mixing bowl, combine the rolled oats, grated carrots, Greek yogurt, milk, maple syrup, vanilla extract, cinnamon, and nutmeg. Stir well to blend all the ingredients.
  2. Gently fold in the raisins to add a pop of sweetness and chewy texture.
  3. Once combined, divide the mixture evenly into two or more jars. Seal them tightly with lids for refrigeration.
  4. Place the jars in the fridge and let them sit overnight (or at least 4 hours) to allow the oats to soak up all the delicious flavors.
  5. In the morning, give your oats a good stir. Top them with chopped nuts and more raisins if desired. Enjoy!

Notes

For best flavor and texture, use freshly grated carrots. The oats can be made the night before for a quick breakfast option and can be stored in the fridge for up to 5 days. If needed, they can be reheated in the microwave.
