Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, grated carrots, brown sugar, flour, baking soda, cinnamon, and nutmeg. Stir until well incorporated.
- In a separate bowl, whisk together the melted butter, egg, and vanilla extract. Combine with the dry ingredients until just blended.
- Fold in raisins or walnuts if using.
- Drop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
Baking
- Bake for 10-12 minutes until edges are golden and centers are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a lighter texture, consider swapping half of the flour with whole wheat flour. Store cookies in an airtight container for up to a week, or freeze them for up to three months.
