Preparation
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cardamom, and salt. Set it aside.
Mixing
- In a large bowl, beat the softened butter with white sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract to the butter-sugar mixture and beat until well incorporated.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined. Avoid overmixing.
Baking
- Use a tablespoon or cookie scoop to drop spoonfuls of dough onto ungreased baking sheets, leaving space between each cookie.
- Bake for about 8-10 minutes, or until the edges are lightly golden.
- Once baked, allow cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
- Dust with confectioners' sugar for added sweetness, if desired.
Notes
Cookies can be stored in an airtight container at room temperature for about a week. For longer storage, freeze them with parchment paper in an airtight container for up to three months. To enjoy warm, microwave for a few seconds.
