  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cardamom Can substitute with ground cinnamon.
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Use butter that’s been softened to room temperature.
  • 1 1/2 cups white sugar
  • 1 piece egg
  • 1 teaspoon vanilla extract
For Decoration
  • 1/2 cup confectioners' sugar Optional for decoration.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cardamom, and salt. Set it aside.
Mixing
  1. In a large bowl, beat the softened butter with white sugar until light and fluffy, about 3-4 minutes.
  2. Add the egg and vanilla extract to the butter-sugar mixture and beat until well incorporated.
  3. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Avoid overmixing.
Baking
  1. Use a tablespoon or cookie scoop to drop spoonfuls of dough onto ungreased baking sheets, leaving space between each cookie.
  2. Bake for about 8-10 minutes, or until the edges are lightly golden.
  3. Once baked, allow cookies to cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
  4. Dust with confectioners' sugar for added sweetness, if desired.

Notes

Cookies can be stored in an airtight container at room temperature for about a week. For longer storage, freeze them with parchment paper in an airtight container for up to three months. To enjoy warm, microwave for a few seconds.
