Ingredients
  

Cookie base
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Mix-ins
  • 1 cup diced apples (preferably Granny Smith) For a pleasant tartness.
  • 1 cup caramel bits
  • 1/2 cup chopped nuts (optional) Use pecans or walnuts.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the diced apples and caramel bits until evenly dispersed.
Baking
  1. Drop tablespoon-sized dollops of dough onto the prepared baking sheets, spacing them apart.
  2. Bake for 12-15 minutes or until the edges are golden brown.
  3. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months. Warm them in the microwave for a few seconds before enjoying.
