Preparation
- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry sheets on a lightly floured surface. Cut them into squares, about 3 inches by 3 inches.
- On each pastry square, place a slice of fresh mozzarella, a couple of cherry tomato halves, and a basil leaf.
- Drizzle a small amount of olive oil over the fillings and sprinkle with salt and pepper.
- Fold the corners of the pastry over the filling to form a pocket. Press down the edges to seal tightly.
Baking
- Place the pastry bites on a lined baking sheet and bake in the preheated oven for about 15–20 minutes, or until golden brown and puffed up.
- Once out of the oven, drizzle with balsamic glaze.
Notes
These bites can be stored in an airtight container in the refrigerator for up to 3 days and can be frozen for up to a month. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes. Consider using cheddar or gouda if fresh mozzarella isn't available, and be careful not to overfill your bites.
