Delicious puff pastries filled with fresh mozzarella, cherry tomatoes, and basil, perfect for appetizers or family gatherings.

Ingredients
  

Pastry and Filling
  • 2 sheets sheets of puff pastry, thawed
  • 8 oz fresh mozzarella cheese, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves
Finishing Touches
  • 2 tbsp balsamic glaze
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry sheets on a lightly floured surface. Cut them into squares, about 3 inches by 3 inches.
  3. On each pastry square, place a slice of fresh mozzarella, a couple of cherry tomato halves, and a basil leaf.
  4. Drizzle a small amount of olive oil over the fillings and sprinkle with salt and pepper.
  5. Fold the corners of the pastry over the filling to form a pocket. Press down the edges to seal tightly.
Baking
  1. Place the pastry bites on a lined baking sheet and bake in the preheated oven for about 15–20 minutes, or until golden brown and puffed up.
  2. Once out of the oven, drizzle with balsamic glaze.

Notes

These bites can be stored in an airtight container in the refrigerator for up to 3 days and can be frozen for up to a month. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes. Consider using cheddar or gouda if fresh mozzarella isn't available, and be careful not to overfill your bites.
