Preparation
- Cut the ripe cantaloupe in half and scoop out the seeds. Use a melon baller or a spoon to scoop the flesh into a bowl.
- In a blender, combine the cantaloupe flesh, sugar, water, and lemon juice. Blend on high speed until you achieve a smooth consistency, approximately 30 seconds.
- Taste the mixture. If you desire more sweetness, add additional sugar to suit your palate.
Chilling
- Pour the smooth cantaloupe mixture into a shallow dish. Cover with plastic wrap and place in the freezer for about 2 hours, or until firm.
Serving
- Once frozen, use a fork to scrape the surface to create a fluffy, granita-like texture. Serve immediately in chilled bowls or cups.
Notes
Store your Cantaloupe Sorbet in an airtight container in the freezer for up to 2 weeks. If ice crystals develop, scrape it to restore the fluffy texture.
