- Prepare the Pie Crust: If using a store-bought crust, follow package instructions for baking. For a homemade crust, roll it out and fit it into a pie plate, then pre-bake according to your recipe until lightly golden.
- Cut the Cantaloupe: Start by slicing the cantaloupe in half and remove the seeds with a spoon. Scoop out the flesh and cut it into small cubes. You should have about 2 cups of cantaloupe pieces.
- Blend the Filling: In a mixing bowl, add the cantaloupe cubes, sugar, lemon juice, vanilla extract, cornstarch, and salt. Using a blender or food processor, puree the mixture until smooth.
- Combine Ingredients: Pour the cantaloupe puree into the pre-baked pie crust. Use a spatula to ensure it’s evenly distributed.
- Chill: Cover the pie with plastic wrap and chill it in the refrigerator for at least 2 hours, or until set.
