  • 1 medium cantaloupe (peeled, seeded, and cut into bite-sized cubes)
  • 1 cup feta cheese or goat cheese (crumbled)
  • 1-2 tablespoons olive oil (optional)
  • salt and pepper (to taste)

  • fresh basil or mint leaves (for garnish)

Method
 

Preparation
  1. Start by peeling your medium cantaloupe. Carefully cut it open, scoop out the seeds, and then chop it into bite-sized cubes.
  2. If you’re using feta cheese, crumble it up with a fork. If you prefer goat cheese, use a spoon to break it into small pieces.
Combining Ingredients
  1. In a large mixing bowl, gently combine the cantaloupe cubes with the crumbled cheese.
  2. Drizzle a little olive oil over the mixture (if desired). Season with salt and pepper to taste. Stir gently.
Serving
  1. Transfer the mixture to a serving platter. Garnish with fresh basil or mint leaves and enjoy it fresh.

Notes

This appetizer is best enjoyed fresh. You can store leftovers in an airtight container in the refrigerator for 2-3 days. Avoid freezing the dish to preserve freshness.
