  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can butter beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 medium onion, chopped
  • 0.5 cup bell pepper, chopped
Sauces and Spices
  • 0.5 cup barbecue sauce
  • 0.5 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
Toppings
  • 1 cup shredded cheese (optional) For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the kidney beans, black beans, butter beans, corn, chopped onion, and bell pepper. Stir until well mixed.
  3. In a separate small bowl, whisk together the barbecue sauce, ketchup, brown sugar, garlic powder, and chili powder. Pour this sauce mixture over the bean mixture and stir until every bean is coated with flavor.
  4. Pour the entire mixture into a greased 9×13 inch baking dish, spreading it evenly.
  5. If you’re using cheese, sprinkle it generously over the top of the casserole.
  6. Place the casserole in the preheated oven and bake for about 30-35 minutes or until bubbly and heated through.
  7. Remove from the oven and let it cool for a few minutes. Serve warm, and enjoy!

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months.
