- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the lemon cake mix, vegetable oil, and eggs. Blend until fully combined; the mixture should be smooth and thick.
- Gently fold in the crushed Oreo cookies, along with the optional lemon zest and vanilla extract, ensuring they are fully incorporated into the dough.
- Using a tablespoon or cookie scoop, form balls of dough and place them on your prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The cookies will look soft; don’t overbake!
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra lemony flavor, consider using fresh lemon juice along with the zest. You can also add white chocolate chips for extra flavor. Watch your baking time closely, as cookies continue to cook as they cool.
