Ingredients
  

Pasta and Seafood
  • 8 ounces fettuccine pasta
  • 1 pound shrimp, deveined and tails removed
  • 1 pound scallops
Sauce Components
  • 4 tablespoons butter Divided for sautéing and sauce
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 teaspoons Cajun seasoning
  • 2 cloves garlic, minced
  • to taste salt and pepper
Garnish
  • to taste fresh parsley For garnish

Method
 

Cooking the Pasta
  1. In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
Sautéing the Seafood
  1. In a large skillet over medium heat, melt 2 tablespoons of butter. Add garlic, shrimp, and scallops. Season with salt, pepper, and Cajun seasoning. Cook for about 3-4 minutes until the seafood is opaque and cooked through. Remove from skillet and set aside.
Preparing the Sauce
  1. In the same skillet, add the remaining butter and let it melt. Slowly pour in the heavy cream, stirring constantly. Bring to a simmer, then add the Parmesan cheese, stirring until melted and combined.
Combining Ingredients
  1. Add the cooked pasta and seafood back into the skillet. Toss everything together until evenly coated with the sauce. Adjust the seasoning if necessary.
Serving
  1. Plate the dish, garnishing with freshly chopped parsley for a pop of color. Enjoy!

Notes

For a complete meal, serve with a fresh side salad and garlic bread. You can also pair it with a light, chilled white wine or sweet tea.
