Ingredients
  

Vegetables
  • 2 medium yellow squash, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces)
Seasonings and Oils
  • 1 tablespoon Cajun seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • for garnish Fresh parsley

Method
 

Preparation
  1. Wash and slice the yellow squash, chop the onion and bell pepper, and mince the garlic.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and bell pepper to the skillet. Sauté until they soften, about 5 minutes.
  3. Stir in the minced garlic and continue to cook for another minute.
  4. Add the sliced yellow squash, diced tomatoes (with their juice), Cajun seasoning, salt, and pepper. Stir to combine.
  5. Cover the skillet and let it simmer for about 10-15 minutes or until the squash is tender, stirring occasionally.
  6. Garnish with freshly chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a skillet over low heat.
