Preparation
- Wash and slice the yellow squash, chop the onion and bell pepper, and mince the garlic.
Cooking
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and bell pepper to the skillet. Sauté until they soften, about 5 minutes.
- Stir in the minced garlic and continue to cook for another minute.
- Add the sliced yellow squash, diced tomatoes (with their juice), Cajun seasoning, salt, and pepper. Stir to combine.
- Cover the skillet and let it simmer for about 10-15 minutes or until the squash is tender, stirring occasionally.
- Garnish with freshly chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a skillet over low heat.
