  • 2 cups Chicken broth Low-sodium broth can be used.
  • 1 cup Bell peppers (diced) Any color works; choose your favorite.
  • 1 medium Onion (diced) Yellow or white onion works best.
  • 3 cloves Garlic (minced) Add more for a stronger garlic flavor.
  • 2 tablespoons Cajun seasoning Adjust quantity based on heat preference.
  • 2 tablespoons Olive oil Can substitute with another cooking oil.
  • Cajun sausage Slice into bite-sized pieces.
  • Salt and pepper To taste.

Method
 

Preparation
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add diced onion and bell peppers; sauté for about 5 minutes until softened.
  3. In the last minute, add minced garlic to the skillet.
Cooking
  1. Slice Cajun chicken sausage into bite-sized pieces and add to the skillet; cook for another 5-7 minutes until browned.
  2. Stir in 1 cup of rice, coating it in the oil and spices.
  3. Pour in 2 cups of chicken broth and sprinkle Cajun seasoning over the mixture.
  4. Bring to a light boil, then reduce heat to low, cover the skillet, and simmer for about 20 minutes until rice is cooked.
  5. Adjust salt and pepper as needed before serving; fluff rice with a fork and garnish with fresh herbs or green onions.

Notes

For a lighter option, turkey sausage can be used. Ensure to watch the rice while it simmers to prevent burning.
