Ingredients

  • 1 pound boneless, skinless chicken thighs (or breasts)
  • 1 tablespoon Cajun seasoning Adjust according to spice preference.
  • 2 tablespoons olive oil
Sauce Ingredients
  • 1/4 cup bourbon Can be substituted with apple juice or chicken broth.
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic (minced)
  • 1 teaspoon corn starch (optional) For thickening the sauce.
Garnish
  • chopped green onions For garnish.

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces and season them with the Cajun seasoning. Let it marinate for about 15 minutes.
Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Making the Sauce
  1. In the same skillet, lower the heat slightly. Pour in the bourbon, then add brown sugar, soy sauce, apple cider vinegar, and minced garlic. Stir and let it simmer for about 5-10 minutes until it thickens slightly.
Combining Ingredients
  1. Return the chicken to the skillet and stir well to coat each piece with the sauce. If a thicker sauce is preferred, mix a teaspoon of corn starch with a little water and stir it in.
Serving
  1. Garnish with chopped green onions and serve hot over rice or with your favorite side.

Notes

Leftover Cajun Bourbon Chicken can be stored in the refrigerator for up to three days or frozen for up to two months. For reheating, use a skillet over low heat, adding a splash of water or broth if needed to maintain moisture.
