Preparation
- Cut the chicken into bite-sized pieces and season them with the Cajun seasoning. Let it marinate for about 15 minutes.
Cooking the Chicken
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Making the Sauce
- In the same skillet, lower the heat slightly. Pour in the bourbon, then add brown sugar, soy sauce, apple cider vinegar, and minced garlic. Stir and let it simmer for about 5-10 minutes until it thickens slightly.
Combining Ingredients
- Return the chicken to the skillet and stir well to coat each piece with the sauce. If a thicker sauce is preferred, mix a teaspoon of corn starch with a little water and stir it in.
Serving
- Garnish with chopped green onions and serve hot over rice or with your favorite side.
