Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Mix in the peanut butter, followed by the eggs and vanilla extract. Beat until well combined.
- In a separate bowl, combine the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
- Gently fold in the chopped Cadbury Creme Eggs, being cautious not to over mix.
- Using a cookie scoop or tablespoon, place dough rounds onto a lined baking sheet, about 2 inches apart.
Baking
- Bake in the preheated oven for 12-14 minutes, or until the edges are golden brown and the centers look slightly underbaked.
- Allow cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Store in an airtight container for up to a week. For fresh cookies anytime, consider freezing cookie dough balls before baking.
