Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Ensure the butter is softened, not melted.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 cup peanut butter Can substitute with almond butter.
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Filling
  • 1 cup Cadbury Creme Eggs, chopped Alternatively, mini Cadbury eggs can be used.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Mix in the peanut butter, followed by the eggs and vanilla extract. Beat until well combined.
  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually add this to the wet mixture, mixing until just combined.
  5. Gently fold in the chopped Cadbury Creme Eggs, being cautious not to over mix.
  6. Using a cookie scoop or tablespoon, place dough rounds onto a lined baking sheet, about 2 inches apart.
Baking
  1. Bake in the preheated oven for 12-14 minutes, or until the edges are golden brown and the centers look slightly underbaked.
  2. Allow cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Store in an airtight container for up to a week. For fresh cookies anytime, consider freezing cookie dough balls before baking.
