  • 1 medium head medium-sized head of cabbage, finely chopped
  • 4 large large eggs
  • 2 tablespoons olive oil or butter Choose either olive oil or butter for sautéing.
  • to taste salt and pepper
Optional Seasoning
  • grated cheese Optional, for topping.
  • chopped herbs (parsley or chives) Optional, for garnish.
  • red pepper flakes Optional, for a little heat.

Method
 

Preparation
  1. Begin by washing and finely chopping the cabbage.
  2. Heat the olive oil or butter in a large skillet over medium heat.
  3. Add the chopped cabbage and sauté for about 5–7 minutes, or until it becomes soft and tender.
  4. Sprinkle salt and pepper to taste while sautéing the cabbage.
Cooking
  1. In a separate bowl, crack the eggs and whisk them until well blended.
  2. Once the cabbage is tender, create a little well in the center of the skillet and pour in the whisked eggs.
  3. Allow the eggs to set for about 1 minute before gently mixing everything together.
  4. Stir until the eggs are fully cooked and combined with the cabbage.
Serving
  1. Once cooked, remove from heat.
  2. Top your Cabbage Eggs with grated cheese, if desired, and sprinkle chopped herbs or red pepper flakes.
  3. Serve hot and enjoy!

Notes

For best flavors, serve with a light salad or crusty bread. Leftovers can be refrigerated and are best reheated on the stovetop.
