Ingredients
  

Shortbread Base
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened should be softened, not melted
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
Apple Filling
  • 3 cups apples, peeled, cored, and sliced Granny Smith or favorite variety
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
Crisp Topping
  • 1/2 cup oats
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy. Gradually add in the flour and salt, mixing until just combined to form a dough. Press this dough into the bottom of a greased 9x9-inch baking dish.
  3. In a large bowl, combine the sliced apples with lemon juice, cinnamon, and sugar. Toss until the apples are well coated.
  4. In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assembly and Baking
  1. Layer the apple filling over the shortbread base, then sprinkle the crisp topping evenly over the apples.
  2. Bake for about 30-35 minutes or until the topping is golden brown and the apples are tender.
  3. Allow the bars to cool for at least 15 minutes before slicing into squares. Serve warm or at room temperature.

Notes

Feel free to swap out apples for pears or peaches. For a unique twist, use coconut oil or ghee instead of butter. Store in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months.
