Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs and vanilla extract, beating until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
  6. Fold in the butterscotch chips gently, ensuring they are evenly distributed throughout the batter.
  7. Spread the batter evenly in the prepared baking pan. If desired, sprinkle cleaned and chopped nuts on top for extra crunch.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few crumbs.
  2. Let the bars cool in the pan for about 10 minutes, then lift them out using parchment paper and cool completely on a wire rack before cutting them into squares.

Notes

Store leftovers in an airtight container at room temperature for up to four days or freeze for up to three months. Reheat in the microwave for a few seconds to regain gooeyness.
