  • 1 cup unsalted butter, softened Make sure it's softened for easier mixing.
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs At room temperature for better mixing.
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips Add more for extra flavor if desired.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy (about 2-3 minutes).
  3. Beat in the eggs one at a time, mixing well after each addition, and then add in the vanilla extract.
  4. In a separate bowl, mix together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring just until combined.
  5. Gently fold in the butterscotch chips until they are evenly distributed in the batter.
  6. Pour the batter into the prepared baking pan, spreading it evenly.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the bars to cool in the pan for at least 10 minutes before slicing into squares.

Notes

For different variations, consider adding chocolate chips, nuts, or a drizzle of peanut butter. Pair with vanilla ice cream or enjoy with coffee or milk.
