Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to remove any lumps.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
- Carefully stir in the boiling water; the batter will be thin, which is desired!
- Pour the batter evenly into the prepared cake pans and smooth the tops.
Baking
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
Frosting
- Once cool, frost with your favorite fudgy frosting and enjoy!
Notes
For best results, use room temperature ingredients and don't skip the boiling water. You can substitute buttermilk with a mix of 1 cup milk and 1 tablespoon vinegar or lemon juice.
