Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
Wet Ingredients
  • 2 large eggs Room temperature
  • 1 cup buttermilk Room temperature
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water Don't skip this step!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to remove any lumps.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Carefully stir in the boiling water; the batter will be thin, which is desired!
  5. Pour the batter evenly into the prepared cake pans and smooth the tops.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Cool the cakes in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
Frosting
  1. Once cool, frost with your favorite fudgy frosting and enjoy!

Notes

For best results, use room temperature ingredients and don't skip the boiling water. You can substitute buttermilk with a mix of 1 cup milk and 1 tablespoon vinegar or lemon juice.
