- Start by pitting the cherries and cutting them in half. Set aside for later.
- In a medium skillet, melt the unsalted butter over medium heat. Keep an eye on it! Stir frequently until the butter turns a nutty brown color and has a slightly caramelized aroma, about 5-7 minutes. Avoid letting it burn.
- Once the butter is browned, add the halved cherries directly into the skillet. Sauté for another 2-3 minutes until the cherries soften slightly.
- Remove the skillet from heat and stir in the freshly squeezed lemon juice. This will add a burst of brightness to the mixture.
- On a serving plate, generously place the burrata cheese in the center. Spoon the cherry and brown butter mixture over the burrata, making sure to include some of that buttery goodness.
- Sprinkle with salt and pepper to taste. If you desire an added touch, garnish with fresh basil leaves.
- Dive right in while the burrata is still warm and creamy!

Substitutions: If you can’t find burrata, fresh mozzarella or ricotta can work as alternatives. Make sure to incorporate the lemon juice once you remove the skillet from heat, as this prevents the acid from cooking away the cherry flavor. Avoid leaving the butter unattended too long—it can go from perfectly bronzed to burnt in a heartbeat. If you have leftovers, store them in an airtight container in the fridge and consume within 2 days for the best texture and taste.
