  • 4 pieces bell peppers (any color works great)
  • 2 cups cooked shredded chicken Ensure the chicken is cooked and shredded beforehand for easy assembly!
  • 1/2 cup buffalo sauce Ensure it's Halal.
  • 1 cup shredded cheese (like mozzarella or cheddar)
  • 1/4 cup chopped green onions
  • to taste none Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). While it heats up, slice the tops off your bell peppers and remove the seeds.
  2. In a bowl, combine the shredded chicken with buffalo sauce, salt, and pepper. Feel free to adjust the seasoning according to your taste.
  3. Spoon the chicken mixture generously into each pepper.
  4. Top each stuffed pepper with a generous amount of shredded cheese.
  5. Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  7. Once out of the oven, sprinkle chopped green onions on top for an extra kick of flavor.
  8. Let them cool slightly and serve warm.

Notes

For substitutions, rotisserie chicken works wonderfully, or opt for Halal grilled turkey for a lighter meal. If short on time, prepare the filling ahead and just assemble it before baking. Make sure to remove excess moisture from the peppers to avoid sogginess.
