Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, buffalo sauce, and softened cream cheese. Stir until well mixed and creamy.
- Fold in half of the shredded cheddar and mozzarella cheese into the chicken mixture.
- Spread the mixture evenly in a greased baking dish.
Topping
- In a separate bowl, combine panko breadcrumbs, remaining cheddar, and mozzarella cheese. Drizzle with olive oil, and mix well.
- Sprinkle this mixture evenly over the chicken layer.
Baking
- Place the baking dish in the preheated oven and bake for 25-30 minutes or until golden brown and bubbly.
- Once baked, remove it from the oven and sprinkle with chopped green onions. Let it cool for a few minutes before serving!
Notes
You can replace the chicken with turkey or plant-based proteins for a vegetarian option. Adjust the spice level of the buffalo sauce according to your taste. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
