  • 8 oz pasta of your choice Choose your favorite type of pasta.
  • 1 cup Brussels sprouts, halved Fresh Brussels sprouts work best.
  • 1 cup butternut squash, diced Roast for the best sweetness.

  • 2 tablespoons olive oil For sautéing the vegetables.
  • 2 cloves garlic, minced Fresh garlic adds great flavor.

Method
 

Cooking the Pasta
  1. Boil a pot of salted water and add your pasta. Cook according to package instructions until al dente. Drain and set aside.
Preparing the Vegetables
  1. Heat olive oil in a large skillet over medium heat. Add the halved Brussels sprouts and diced butternut squash to the pan.
  2. Cook the veggies for about 10-12 minutes, or until the Brussels sprouts are golden brown and the butternut squash is tender. Stir occasionally to avoid sticking.
  3. Once cooked, add the minced garlic to the pan and mix well. Cook for another 1-2 minutes, allowing the garlic to become fragrant.
Combining and Serving
  1. Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper to taste.
  2. Plate your pasta and top with grated Parmesan cheese if desired. Enjoy your delicious creation!

Notes

Consider adding spinach or kale for extra greens. Ensure not to overcrowd the pan to maintain the crisp texture.
