Ingredients
  

For the Dip
  • 2 cups cherry tomatoes, diced Fresh tomatoes are recommended.
  • 1/2 cup fresh basil, chopped Feel free to swap for dried herbs if needed.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1/4 cup olive oil Extra virgin olive oil is best.
  • 1 cup mozzarella cheese, shredded Melt for extra flavor.
  • to taste Salt and pepper Adjust per preference.
For the Toast
  • 1 loaf baguette, sliced Sliced for easy dipping.

Method
 

Preparation
  1. Preheat your oven to 400° F (200° C).
  2. Arrange the baguette slices on a baking sheet and brush one side lightly with olive oil.
Toasting
  1. Bake the baguette slices for about 5-7 minutes or until golden and crispy.
Mixing the Dip
  1. In a mixing bowl, combine the diced tomatoes, basil, garlic, and remaining olive oil. Season with salt and pepper.
  2. Gently stir until evenly mixed.
Assembling
  1. On a serving platter, layer the tomato mixture and sprinkle mozzarella over the top.
  2. Optional: Return to the oven for an additional 3-5 minutes until the cheese melts.
Serving
  1. Serve the Bruschetta Dip alongside the crispy baguette slices.

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350° F (175° C) for 10 minutes.
