Bruschetta Chicken Pasta

- For the Pasta
- 12 oz penne or spaghetti pasta
- Salt for boiling water
- For the Chicken
- 1 lb boneless skinless chicken breasts (cut into bite-sized pieces)
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- For the Bruschetta Topping
- 2 cups diced tomatoes
- ¼ cup fresh basil chopped
- 2 cloves garlic minced
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
- For Garnish
- Grated Parmesan cheese
- Fresh basil leaves
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
Step 2: Cook the Chicken
Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper. Cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken and set aside.
Step 3: Prepare the Bruschetta Topping
