Bruschetta Chicken Pasta

Ingredients
  

  • For the Pasta
  • 12 oz penne or spaghetti pasta
  • Salt for boiling water
  • For the Chicken
  • 1 lb boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For the Bruschetta Topping
  • 2 cups diced tomatoes
  • ¼ cup fresh basil chopped
  • 2 cloves garlic minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For Garnish
  • Grated Parmesan cheese
  • Fresh basil leaves

Instructions
 

  • Step 1: Cook the Pasta
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Step 2: Cook the Chicken
  • Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper. Cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken and set aside.
  • Step 3: Prepare the Bruschetta Topping
  • In a mixing bowl, combine the diced tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Toss to combine.
  • Step 4: Combine and Serve
  • Add the cooked pasta and chicken to the skillet. Pour the bruschetta topping over the pasta and toss to combine. Cook for 2-3 minutes to heat through. Garnish with grated Parmesan cheese and fresh basil leaves. Serve hot.
