Ingredients
  

For the Cookies
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) for the perfect bake.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-5 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg (if using).
  5. Gradually add the dry mixture to the wet mixture. Stir until just combined. Avoid over-mixing, or your cookies may turn out tough!
  6. Use a cookie scoop or tablespoon to drop dough balls onto a lined baking sheet, leaving space between each cookie.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a dairy-free alternative, substitute butter with coconut oil, but be aware it may alter the flavor slightly. Watch the cookies closely as they bake, since oven times can vary. Store cookies in an airtight container at room temperature for up to one week, or freeze for up to three months.
