Ingredients
  

For the dough
  • 1 cup unsalted butter Make sure it's halal-compliant.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup chocolate chips

Method
 

Preparation
  1. In a medium saucepan over medium heat, melt the unsalted butter. Continue cooking, stirring frequently, until it turns golden brown and gives off a nutty aroma (about 5-7 minutes). Be careful not to burn it!
  2. In a large mixing bowl, combine the brown sugar and granulated sugar. Pour in the brown butter and mix until well combined.
  3. Stir in the canned pumpkin puree and vanilla extract until the mixture is smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips until evenly distributed throughout the dough.
  7. For the best texture, refrigerate the cookie dough for at least 30 minutes.
  8. Preheat your oven to 350°F (175°C).
  9. After chilling, use a cookie scoop or tablespoon to drop dough onto a lined baking sheet, spacing them about 2 inches apart.
  10. Bake for 12-15 minutes, or until the edges are golden brown and the centers look slightly undercooked.
  11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. If you want to keep them longer, freeze for up to three months. Thaw at room temperature or microwave for a few seconds.
