- Mix the Wet Ingredients: In a large bowl, combine the brown butter, pumpkin puree, brown sugar, granulated sugar, and vanilla extract. Mix well with a whisk until smooth.
- Add the Eggs: Beat in the eggs one at a time, ensuring each is well mixed before adding the next.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add this mixture to the pumpkin mixture, blending until just combined.
- Stir in the Chocolate Chips: Gently fold the chocolate chips into the dough, making sure they are evenly distributed.
- Chill the Dough (Optional): For a less sticky dough, chill in the refrigerator for 30 minutes, though this step is optional.
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Scoop the Cookies: Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, leaving sufficient space in between each cookie to account for spreading.
