  • 1 lb baby potatoes, halved Crispy when roasted.

Preparation
  1. Preheat your broiler to high heat.
  2. Season the rack of lamb generously with salt, pepper, and granulated garlic, rubbing it all over.
Cooking
  1. Place the seasoned lamb on a broiler pan and insert it into the broiler. Cook for about 20-25 minutes, basting occasionally.
  2. While the lamb is broiling, toss the halved baby potatoes and broccoli florets with olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the vegetables in the oven at 400°F for about 25-30 minutes until golden and tender.
  4. Once cooked, let the lamb rest for a few minutes before slicing.
Serving
  1. Serve the sliced lamb alongside the roasted potatoes and broccoli.

Notes

Allowing the lamb to rest after cooking helps keep it juicy. Pair with a fresh green salad or garlic bread, and consider serving with red wine like Cabernet.
