- Gradually add the vegetable broth while stirring to avoid any lumps. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10-12 minutes, or until the broccoli is tender.
- Use an immersion blender to carefully blend the soup to your desired consistency. If you prefer a chunkier texture, blend only half of it, leaving some broccoli intact.
- Stir in the milk and shredded cheddar cheese, mixing until the cheese is fully melted and the soup is creamy. Season with salt and pepper to taste.
