  • 2 cups vegetable broth
  • 1 cup milk
  • 1/4 cup all-purpose flour

Preparation
  1. In a medium pot, melt the butter over medium heat. Add the chopped onions and sauté for about 3-5 minutes, until they turn soft and translucent.
  2. Stir in the broccoli florets and sprinkle the flour over the top. Cook for another 2-3 minutes, allowing the flour to toast slightly as you mix everything together.
  3. Gradually add the vegetable broth while stirring to avoid any lumps. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 10-12 minutes, or until the broccoli is tender.
  4. Use an immersion blender to carefully blend the soup to your desired consistency. If you prefer a chunkier texture, blend only half of it, leaving some broccoli intact.
  5. Stir in the milk and shredded cheddar cheese, mixing until the cheese is fully melted and the soup is creamy. Season with salt and pepper to taste.
  6. Ladle the soup into bowls, and if you desire, top with your favorite garnishes like croutons or additional cheese. Enjoy!

For perfecting the soup, use freshly shredded cheese, consider vegetable substitutes, and avoid overcooking after adding cheese. Store in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months.
