Brigadeiro Cheesecake: A Decadent Delight

Ingredients
  

  • 1 1/2 cups chocolate cookie crumbs or digestive cookies
  • 1/4 cup melted butter
  • 3 packages 225g each softened cream cheese
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 3/4 cup sour cream
  • 3 eggs
  • 200 g dark chocolate chopped
  • 1/2 cup sweetened condensed milk
  • 1/4 cup heavy cream
  • Mini brigadeiros Brazilian chocolate truffles
  • Chocolate sprinkles

Instructions
 

  • Prepare the Crust: Preheat your oven to 180°C (350°F). In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Mix until the crumbs are well-coated. Press this mixture into the bottom of a springform pan to form a crust. Bake for 10 minutes, then let it cool.
  • Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract and sour cream, mixing well. Gradually beat in the eggs, one at a time, ensuring each egg is incorporated before adding the next. Pour this luscious filling over the cooled crust and smooth the top with a spatula.
  • Bake the Cheesecake: Place the cheesecake in the preheated oven and bake for 55-60 minutes until the center is set but slightly wobbly. To avoid cracking, let the cheesecake cool in the oven with the door slightly ajar for about an hour. Then refrigerate for at least 4 hours (or overnight) to let it fully set.
  • Make the Brigadeiro Ganache: In a small saucepan, mix the chopped dark chocolate, sweetened condensed milk, and heavy cream over low heat. Stir continuously until the chocolate melts completely, resulting in a smooth and shiny ganache. Allow it to cool slightly.
  • Decorate the Cheesecake: Once the cheesecake is chilled, pour the brigadeiro ganache over the top, spreading it evenly. Decorate with mini brigadeiros around the edge and sprinkle chocolate sprinkles on top for an extra touch of sweetness.
