- In a large pot, cook the macaroni according to package instructions. Drain and set aside.
- In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden, stirring constantly.
- Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 5-7 minutes.
- Once your sauce is creamy, reduce the heat to low. Stir in the Brie and cheddar cheese, and mix until all the cheese is melted and combined.
- Add garlic powder, salt, and pepper to taste. Then, fold in the cooked macaroni until evenly coated in the cheese sauce.
- If desired, transfer the mac and cheese to a baking dish and sprinkle breadcrumbs on top. Broil for 2-3 minutes until golden brown.
- Serve hot, garnished with fresh parsley.
