  • 8 oz macaroni (cooked according to package instructions)
  • 8 oz Brie cheese (rind removed and chopped)
  • 1 cup sharp cheddar cheese (shredded)
Sauce Ingredients
  • 2 cups whole milk (or half-and-half for extra creaminess)
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Topping and Garnish
  • 1/2 cup breadcrumbs (optional, for topping)
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. In a large pot, cook the macaroni according to package instructions. Drain and set aside.
  2. In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden, stirring constantly.
  3. Gradually whisk in the milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 5-7 minutes.
  4. Once your sauce is creamy, reduce the heat to low. Stir in the Brie and cheddar cheese, and mix until all the cheese is melted and combined.
  5. Add garlic powder, salt, and pepper to taste. Then, fold in the cooked macaroni until evenly coated in the cheese sauce.
  6. If desired, transfer the mac and cheese to a baking dish and sprinkle breadcrumbs on top. Broil for 2-3 minutes until golden brown.
  7. Serve hot, garnished with fresh parsley.

Notes

To elevate the dish, consider experimenting with different cheese varieties or adding protein like cooked chicken or sautéed mushrooms. Store leftovers in an airtight container for 3-4 days.
