Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the sweet potatoes thoroughly and cut them in half lengthwise.
  3. Brush the cut sides with olive oil and sprinkle salt, pepper, and cinnamon.
  4. Place the sweet potatoes cut side down on a lined baking sheet.
Cooking
  1. Bake for about 25 minutes, until fork-tender and slightly caramelized.
  2. Remove, flip them over, drizzle with maple syrup, and bake for an additional 5 minutes.
Serving
  1. Plate the roasted sweet potatoes and add desired toppings.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes. Maintain the crispy texture by avoiding microwaving.
