Dough Ingredients
  • 2 cups tapioca flour
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup grated parmesan cheese Can substitute with other hard cheeses like mozzarella.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the tapioca flour and salt.
  3. In a saucepan over medium heat, combine the milk and vegetable oil. Bring to a gentle simmer.
  4. Pour the heated milk mixture over the tapioca flour and salt. Stir until combined into a dough-like consistency.
  5. Let the mixture cool slightly, then add the eggs one at a time, mixing well. Fold in grated parmesan cheese.
  6. Shape the dough into small balls, about the size of a golf ball.
  7. Place the balls on a greased baking sheet, leaving space in between. Bake for 20 to 25 minutes, or until golden brown.
  8. Let them cool for a few minutes before serving.

Notes

Store in an airtight container in the fridge for 3 to 5 days. Can be frozen for up to a month. Reheat in the oven at 350°F (175°C) for 10 minutes.
