- Pat the chicken thighs dry and season them with black pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and sear each side until golden brown (about 3-4 minutes per side). Transfer to a plate and set aside.
- In the same skillet, add the sliced onion and bell peppers. Sauté for 5-7 minutes, or until slightly softened, then add minced garlic and cook for another minute until fragrant.
