  • 4 pieces chicken thighs, skinless and boneless For tenderness
  • 1 cup Catalina dressing The star of the show!
  • 1 medium onion, sliced
  • 2 pieces bell peppers, red and yellow For color
  • 3 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • optional Fresh parsley for garnishing

Cooking Steps
  1. Pat the chicken thighs dry and season them with black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and sear each side until golden brown (about 3-4 minutes per side). Transfer to a plate and set aside.
  3. In the same skillet, add the sliced onion and bell peppers. Sauté for 5-7 minutes, or until slightly softened, then add minced garlic and cook for another minute until fragrant.
  4. Return the chicken to the skillet and pour the Catalina dressing over everything. Stir to coat.
  5. Lower the heat, cover, and let it simmer for 20-25 minutes, or until the chicken is cooked through and perfectly tender.
  6. Garnish with fresh parsley before serving. Enjoy the flavorful explosion!

Notes

Feel free to use any root vegetables you have on hand for added flavor and nutrition. If using bone-in chicken, extend the simmering time for tenderness. Store leftovers in an airtight container for up to 3 days.
