  • 12 oz Bow tie pasta
  • 4 cups Fresh spinach, washed and dried
  • 1 cup Mushrooms, sliced
  • 1 large Onion, thinly sliced
  • 3 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • ½ cup Parmesan cheese (optional, for garnishing)

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain the pasta, but reserve about ½ cup of the pasta water for later.
Caramelizing the Onions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15 minutes until the onions become golden brown and caramelized.
Sautéing the Mushrooms
  1. Once the onions are caramelized, add the sliced mushrooms. Cook for an additional 5-7 minutes until the mushrooms are tender and browned. Stir occasionally to ensure even cooking.
Adding Garlic and Spinach
  1. Sprinkle minced garlic into the skillet and sauté for about 1 minute until fragrant. Add the fresh spinach, stirring until wilted—this will take just a couple of minutes.
Combining Ingredients
  1. Toss in the cooked bow tie pasta to the skillet with the onion and mushroom mixture. If the dish looks dry, add a bit of the reserved pasta water until you reach your desired consistency. Season with salt and pepper to taste.
Serving
  1. Plate the pasta and finish with freshly grated Parmesan cheese if desired. Enjoy your delicious homemade creation!

Notes

Consider adding cherry tomatoes or bell peppers for extra color and flavor. Ensure the water for the pasta is boiling before adding your noodles to prevent gumminess. Don't rush the caramelization of the onions—low and slow is key for depth of flavor.
