Preparation
- In a large bowl, mix together the bourbon, brown sugar, soy sauce, and Dijon mustard.
- Add the chicken breasts, making sure they are coated well. Allow them to marinate for at least 20 minutes.
Cooking
- Heat olive oil in a large skillet over medium-high heat.
- Once hot, add the marinated chicken, reserving the marinade for later. Sear the chicken for about 5-7 minutes on each side until golden brown and fully cooked.
- After the chicken is cooked, pour the reserved marinade into the skillet, letting it bubble and thicken for about 3-4 minutes.
- Stir in the chopped pecans, coating them with the glaze. Cook for an additional minute.
Serving
- Place the chicken on a platter, drizzle with any extra sauce from the skillet, and garnish with fresh parsley.
- Serve while hot with your favorite sides.
Notes
For best results, marinate chicken overnight if possible. Watch the heat to avoid burning the marinade.
