Ingredients
  

For the marinade
  • 1 cup bourbon Choose a high-quality bourbon for best flavor
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
For the chicken
  • 4 pieces boneless, skinless chicken breasts Fresh chicken recommended
  • 2 tablespoons olive oil For searing the chicken
  • Salt Salt To taste
  • Pepper Pepper To taste
For the topping
  • 1 cup pecans, chopped Add for crunch
  • Fresh parsley for garnish Optional for color

Method
 

Preparation
  1. In a large bowl, mix together the bourbon, brown sugar, soy sauce, and Dijon mustard.
  2. Add the chicken breasts, making sure they are coated well. Allow them to marinate for at least 20 minutes.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Once hot, add the marinated chicken, reserving the marinade for later. Sear the chicken for about 5-7 minutes on each side until golden brown and fully cooked.
  3. After the chicken is cooked, pour the reserved marinade into the skillet, letting it bubble and thicken for about 3-4 minutes.
  4. Stir in the chopped pecans, coating them with the glaze. Cook for an additional minute.
Serving
  1. Place the chicken on a platter, drizzle with any extra sauce from the skillet, and garnish with fresh parsley.
  2. Serve while hot with your favorite sides.

Notes

For best results, marinate chicken overnight if possible. Watch the heat to avoid burning the marinade.
