  • 2 cups bok choy, chopped Fresh and tender
  • 1 cup mushrooms, sliced Shiitake or button mushrooms work well
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce Adjust to taste
  • 1 teaspoon fresh ginger, grated Optional
  • Salt and pepper to taste
  • Sesame seeds for garnish Optional

Method
 

Preparation
  1. Start by washing and chopping the bok choy into bite-sized pieces.
  2. Slice the mushrooms and mince the garlic and ginger.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.
  2. Add the minced garlic and optional ginger to the skillet. Sauté for about 30 seconds until fragrant, being careful not to burn them!
  3. Toss in the sliced mushrooms and cook for 3-4 minutes until they’re golden brown and have released moisture.
  4. Stir in the chopped bok choy and cook for another 3-4 minutes, stirring frequently until wilted but still vibrant.
  5. Drizzle the soy sauce over the stir-fry and toss everything together. Season with salt and pepper to taste.
  6. Transfer the stir-fry to a serving dish, sprinkle sesame seeds on top, and enjoy your delicious creation!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or by sautéing in a skillet.
