Preparation
- Start by washing and chopping the bok choy into bite-sized pieces.
- Slice the mushrooms and mince the garlic and ginger.
Cooking
- In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.
- Add the minced garlic and optional ginger to the skillet. Sauté for about 30 seconds until fragrant, being careful not to burn them!
- Toss in the sliced mushrooms and cook for 3-4 minutes until they’re golden brown and have released moisture.
- Stir in the chopped bok choy and cook for another 3-4 minutes, stirring frequently until wilted but still vibrant.
- Drizzle the soy sauce over the stir-fry and toss everything together. Season with salt and pepper to taste.
- Transfer the stir-fry to a serving dish, sprinkle sesame seeds on top, and enjoy your delicious creation!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or by sautéing in a skillet.
