Ingredients
  

Salad Base
  • 4 cups mixed greens (spinach, arugula, or your favorite blend)
  • 2 cups fresh blueberries Ensure they are washed thoroughly.
  • 2 ripe peaches diced Wash before dicing.
  • 1/4 cup red onion Thinly sliced.
  • 1/4 cup walnuts or pecans Roughly chopped (optional).
  • 1 cup feta cheese Crumbled.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper To taste.

Method
 

Preparation
  1. Wash the blueberries and peaches thoroughly.
  2. Dice the peaches into bite-sized pieces and thinly slice the red onion.
Assembling the Salad
  1. In a large salad bowl, add the mixed greens and mix in the sliced red onion.
  2. Gently toss in the blueberries and diced peaches over the greens.
  3. Sprinkle the crumbled feta on top.
  4. Toss in the walnuts or pecans for added crunch, if desired.
Dressing the Salad
  1. Drizzle the olive oil and balsamic vinegar over the salad and gently toss.
  2. Season with salt and pepper to taste.
