Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 cup all-purpose flour (or whole wheat flour for a healthier option) Substitute with a gluten-free blend for gluten-free bars.
  • 1/2 cup brown sugar (or honey/maple syrup)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon (optional) Highly recommended for flavor.
Wet Ingredients
  • 1/2 cup melted coconut oil (or unsalted butter)
  • 1 unit egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the oats, flour, baking powder, salt, and cinnamon. Stir them together until evenly mixed.
  3. In another bowl, whisk together the melted coconut oil, brown sugar (or honey/maple syrup), egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry mixture. Stir just until combined, being careful not to overmix. Gently fold in the blueberries.
  5. Spread the mixture evenly into the prepared baking pan.
Baking
  1. Bake in the preheated oven for about 20-25 minutes, or until the edges are golden and a toothpick comes out clean.
  2. Let them cool completely in the pan before cutting them into bars.

Notes

Store in an airtight container for up to a week or freeze for up to three months. Reheat in the microwave for about 20 seconds or enjoy cold.
