Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the oats, flour, baking powder, salt, and cinnamon. Stir them together until evenly mixed.
- In another bowl, whisk together the melted coconut oil, brown sugar (or honey/maple syrup), egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry mixture. Stir just until combined, being careful not to overmix. Gently fold in the blueberries.
- Spread the mixture evenly into the prepared baking pan.
Baking
- Bake in the preheated oven for about 20-25 minutes, or until the edges are golden and a toothpick comes out clean.
- Let them cool completely in the pan before cutting them into bars.
Notes
Store in an airtight container for up to a week or freeze for up to three months. Reheat in the microwave for about 20 seconds or enjoy cold.
