Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, then stir in the vanilla extract until fully combined.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix the dry mixture into the wet ingredients until just combined.
- Gently fold in the fresh blueberries, white chocolate chips, lemon zest, and lemon juice. Be cautious not to overmix.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto a lined baking sheet, spaced about 2 inches apart.
Baking
- Bake the cookies for 12-15 minutes, or until the edges are golden brown.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
For the best texture, do not overbake. Chill the dough for 30 minutes before baking for thicker cookies.
