Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the egg whites until stiff peaks form.
  3. In another bowl, combine the cottage cheese, egg yolks, almond flour, baking powder, vanilla extract, and salt. Mix until well-combined.
  4. Gently fold the egg whites into the cottage cheese mixture, being careful not to deflate the airiness.
  5. Once combined, gently fold in the fresh blueberries.
  6. Spoon the mixture onto the baking sheet in dollops, or shape it into a loaf. Bake in the preheated oven for about 25-30 minutes or until golden brown on top.
  7. Allow the cloud bread to cool on a wire rack before serving.

Notes

Serve with a side of fresh fruit or a light yogurt dip. Complement with herbal tea or an iced latte.
