Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk the egg whites until stiff peaks form.
- In another bowl, combine the cottage cheese, egg yolks, almond flour, baking powder, vanilla extract, and salt. Mix until well-combined.
- Gently fold the egg whites into the cottage cheese mixture, being careful not to deflate the airiness.
- Once combined, gently fold in the fresh blueberries.
- Spoon the mixture onto the baking sheet in dollops, or shape it into a loaf. Bake in the preheated oven for about 25-30 minutes or until golden brown on top.
- Allow the cloud bread to cool on a wire rack before serving.
Notes
Serve with a side of fresh fruit or a light yogurt dip. Complement with herbal tea or an iced latte.
