- In a medium saucepan, combine the fresh blueberries, sugar, cornstarch, lemon juice, and vanilla extract over medium heat.
- Stir gently while cooking for about 5-7 minutes until the mixture starts to bubble and thicken.
- Remove from heat and let it cool.
Assembly
- Take your prepared graham cracker crust and pour the blueberry mixture evenly over the crust, spreading it out gently with a spatula.
- Once the blueberry layer has cooled, spread the whipped cream over the top of the blueberries, creating a smooth layer.
- Consider piping the whipped cream for a decorative touch.
Chill and Serve
- Place the dessert in the refrigerator for at least 1 hour to set properly.
- Once chilled, it’s ready to slice and serve!
Notes
For best results, allow ample time for the dessert to chill to enhance flavors and help it set well. Can use frozen blueberries if fresh are not available—just ensure they are thawed and drained.
