Ingredients
  

For the Crust and Topping
  • 1 cup all-purpose flour
  • 1 cup rolled oats Quick oats can also be used
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
For the Filling
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, cinnamon, and salt. Mix until coarse crumbs form.
  3. Add the softened butter and combine until well mixed.
  4. Reserve about 1 cup of the crumble mixture for the topping and press the remaining mixture into the bottom of the prepared baking dish.
  5. In a separate bowl, mix the fresh blueberries with lemon juice and spread over the crust.
  6. Scatter the reserved crumble mixture evenly over the blueberries.
Baking
  1. Bake in the preheated oven for 30-35 minutes until the topping is golden brown and the blueberries are bubbly.
  2. Remove from the oven and allow to cool completely in the dish before lifting out and slicing.

Notes

For a gluten-free version, substitute all-purpose flour with oat flour. Experiment with adding vanilla extract or nuts for extra flavor.
