For the Bread
  • 1 cup cream cheese, softened Ensure it is at room temperature
  • 1/2 cup butter, softened Make sure it is at room temperature
  • 1 cup sugar
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute half for whole wheat flour for a healthier option
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries, fresh or frozen

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  3. In a large mixing bowl, blend the softened cream cheese and butter until smooth and creamy.
  4. Gradually add the sugar to the mixture, mixing well. Add eggs one at a time, followed by vanilla extract.
  5. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Gently fold in the blueberries.
  8. Transfer the batter into the prepared loaf pan.
Baking
  1. Bake for 40-50 minutes, or until a toothpick inserted comes out clean.
  2. Once done, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

To ensure the best results, avoid overmixing the batter. If you wish to add a touch of sweetness, consider serving with whipped cream or a sprinkle of cinnamon sugar. Store in an airtight container for freshness.
