Ingredients
  

Main Ingredients
  • 1 cup cream cheese, softened Needs to be softened before use.
  • 1/2 cup sugar
  • 2 large eggs At room temperature.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Additional Ingredients
  • 1 cup blueberries Fresh or frozen.
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with oil or line it with parchment paper.
  2. In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  3. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
  4. In another bowl, mix together the all-purpose flour, baking powder, and salt. Gradually add this to the cream cheese mixture until just combined.
  5. Pour in the milk and gently fold it into the batter until smooth.
  6. Carefully fold in the blueberries.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the bread cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
  2. Slice and serve!

Notes

To enhance the flavor, try adding a dusting of powdered sugar or a drizzle of honey before serving. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
