Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan with oil or line it with parchment paper.
- In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
- Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
- In another bowl, mix together the all-purpose flour, baking powder, and salt. Gradually add this to the cream cheese mixture until just combined.
- Pour in the milk and gently fold it into the batter until smooth.
- Carefully fold in the blueberries.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Let the bread cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
- Slice and serve!
Notes
To enhance the flavor, try adding a dusting of powdered sugar or a drizzle of honey before serving. Store in an airtight container in the refrigerator for up to a week or freeze for up to three months.
