  • 2 cups cottage cheese (preferably low-fat)
  • 1 cup fresh or frozen blueberries Do not thaw if using frozen blueberries.
  • 1 cup rolled oats
  • 1/4 cup honey or agave syrup Adjust for sweetness.
  • 1/4 cup almond milk or any non-dairy milk
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking dish or similar-sized oven-safe dish with non-stick spray.
  2. In a large mixing bowl, whisk together the cottage cheese, honey, almond milk, eggs, baking powder, vanilla extract, cinnamon, and salt until well blended.
  3. Gently fold the rolled oats and blueberries into the mixture. Be careful not to break the blueberries too much!
  4. Transfer the mixture into the prepared baking dish and spread it out evenly.
  5. Place the dish in the preheated oven and bake for about 30-35 minutes, or until it’s set and the top is lightly golden.
  6. Allow the bake to cool for about 10 minutes before slicing. Serve warm or at room temperature with your favorite toppings.

Notes

Store in the fridge for 4-5 days in an airtight container. Freeze portions for 1-2 months. Reheat in the microwave or oven to enjoy again.
