Preparation
- Preheat the oven to 350°F (175°C). Grease a 9-inch square baking dish or similar-sized oven-safe dish with non-stick spray.
- In a large mixing bowl, whisk together the cottage cheese, honey, almond milk, eggs, baking powder, vanilla extract, cinnamon, and salt until well blended.
- Gently fold the rolled oats and blueberries into the mixture. Be careful not to break the blueberries too much!
- Transfer the mixture into the prepared baking dish and spread it out evenly.
- Place the dish in the preheated oven and bake for about 30-35 minutes, or until it’s set and the top is lightly golden.
- Allow the bake to cool for about 10 minutes before slicing. Serve warm or at room temperature with your favorite toppings.
Notes
Store in the fridge for 4-5 days in an airtight container. Freeze portions for 1-2 months. Reheat in the microwave or oven to enjoy again.
