  • 1 cup blueberries (fresh or frozen, do not thaw)

  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour or oats Add for texture.

Preparation
  1. Ensure your cream cheese is softened by letting it sit at room temperature for at least 15 minutes.
  2. In a large mixing bowl, combine the softened cream cheese, Greek yogurt, honey or maple syrup, and vanilla extract. Mix until smooth and creamy.
  3. Gradually mix in the protein powder until thoroughly incorporated.
  4. Gently fold in the blueberries, being careful not to smash them.
  5. Mix in the almond flour or oats until well combined.
  6. Scoop small amounts of the mixture and roll them into bite-sized balls, about one inch in diameter.
  7. Place the balls onto a lined baking sheet or shallow dish.
  8. Cover and refrigerate for at least one hour to allow them to firm up.

  1. Serve the bites chilled or store them in an airtight container in the fridge for a nutritious snack.

Notes

These bites can be stored in an airtight container in the refrigerator for up to one week, or frozen for up to three months. Allow to thaw at room temperature for 15-20 minutes before serving.
