BLT Chicken Salad Grilled Cheese Sandwich: A Delightful Comfort Food Adventure

Ingredients
  

  • 4 cups cooked and shredded or sliced chicken
  • 6 strips cooked and crumbled bacon omit this if you prefer a pork-free version
  • 1 cup diced tomatoes
  • 1/2 cup diced celery optional
  • 1/4 cup finely diced red onion
  • 1/4 cup thinly sliced green onion
  • 1/2 cup mayonnaise or sour cream
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried chives
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Bread slices for grilling your choice!

Instructions
 

  • In a large mixing bowl, combine the cooked chicken, crumbled bacon (if using), diced tomatoes, celery, red onion, and green onion.
  • In another bowl, whisk together the mayonnaise, apple cider vinegar, dried parsley, dried dill, chives, garlic powder, onion powder, salt, and pepper.
  • Pour the dressing over the chicken mixture and gently toss until everything is well-coated.
  • Butter one side of two slices of bread. Place one slice butter-side down on a skillet.
  • Scoop a generous portion of the chicken salad mixture onto the slice in the skillet, and then top with another slice of bread, butter-side up.
  • Grill over medium heat until the bread is golden brown and the cheese is melted, flipping once to ensure even grilling.
