BLT Chicken Salad Grilled Cheese Sandwich: A Delightful Comfort Food Adventure

Ingredients
  

  • 4 cups cooked and shredded or sliced chicken
  • 6 strips cooked and crumbled bacon omit this if you prefer a pork-free version
  • 1 cup diced tomatoes
  • 1/2 cup diced celery optional
  • 1/4 cup finely diced red onion
  • 1/4 cup thinly sliced green onion
  • 1/2 cup mayonnaise or sour cream
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon dried chives
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Bread slices for grilling your choice!

Method
 

  1. In a large mixing bowl, combine the cooked chicken, crumbled bacon (if using), diced tomatoes, celery, red onion, and green onion.
  2. In another bowl, whisk together the mayonnaise, apple cider vinegar, dried parsley, dried dill, chives, garlic powder, onion powder, salt, and pepper.
  3. Pour the dressing over the chicken mixture and gently toss until everything is well-coated.
  4. Butter one side of two slices of bread. Place one slice butter-side down on a skillet.
  5. Scoop a generous portion of the chicken salad mixture onto the slice in the skillet, and then top with another slice of bread, butter-side up.
  6. Grill over medium heat until the bread is golden brown and the cheese is melted, flipping once to ensure even grilling.
